Roast portobello mushroom with tallegio, roast cherry tomatoes and pan fried gnocchi

Tonight I cooked myself this minimal effort dish which packs loads of flavour and takes about 15 minutes in total to make! The gnocchi, when fried, provides lovely stodgy comfort in this cold weather. Plus its vegetarian and healthy!...ish.

Easy peasy method:
  1. Peel the mushroom and remove the stalk (this is my preference, you can leave it as it is if you wish).
  2. Top with tallegio and place in a tin with halved cherry tomatoes. Season and drizzle olive oil over the whole thing then place in a hot oven.
  3. Get a frying pan and place on the gas. When hot add olive oil and a little butter. When melted add your gnocchi and fry, shaking occasionally for about 3 minutes or until they are golden.
  4. Plate up your food and enjoy! I added half a creamy and ripe avocado...yum.

This looks great! I especially like all the different colours, that's how you can tell you're getting lots of different nutrients too. :) I've never actually had gnocchi, but I'd love to try it.
